Spring is in full swing and Easter is right around the corner. As always, an approaching holiday means many of you will be spending the day visiting with family and enjoying lots of good food. Dont let the prospect of holiday cooking overwhelm you -- whether youre hosting a large family dinner, planning a small celebration with a few friends, or simply bringing a dish to pass at another persons home, you can easily and quickly prepare delicious dishes that will get you out of the kitchen and into good conversation with loved ones. Many of us have traditional Easter recipes that we like to prepare each year, and its always fun to spice things up with a new recipe or two. For variety, I turn to my recipe collections in the Holly Clegg Trim & Terrific Cookbook, and the Holly Clegg Trim & Terrific Home Entertaining The Easy Way, where I know I can find just the right dish for any meal. A Honey-Glazed Turkey Breast makes for a great main dish that can be complemented by a variety of casseroles or sides. CHEESE BALL 1 (8-ounce) package
fat-free cream cheese, softened In a large bowl, mix together both the cream cheeses, the seasoned salt, and the onion. Stir in the Cheddar cheese, dates, raisins, cranberries, and pecans, mixing well. Mold into a ball, and refrigerate until serving. Makes 32 Servings. Per (2 Tbsp) Serving (cheeseball only): 89 Cal; 4 g Total Fat (2 g Sat Fat); 12 g Carb; 8 mg Cholesterol; 131 mg Sodium; 3 g Protein; 1 g Fiber. Exchanges: 1 Fruit; 1 Fat.
1 (5-pound) turkey breast *Optional salt not included in nutritional analysis. Preheat oven to 325°F. Remove the skin from the turkey breast and discard; place the breast in a roaster pan. Season with the salt and pepper. In a small bowl, mix together the honey, Dijon mustard, and rosemary. Pour half the glaze over the turkey breast, and bake, uncovered, for about 2 hours, or until the meat thermometer registers 170° to 175°F in the thickest part of the breast. You may want to add a little water to the bottom of pan, if needed. During the final 15 minutes of baking, brush the remaining glaze over the turkey breast. Serve. Makes 10 to 12 Servings. GREEN
BEAN CASSEROLE 1 (16-ounce) package frozen French-cut green
beans *Optional salt not included in nutritional analysis. Cook the green beans according to the package directions; drain well. Preheat the broiler. In a small pot, sauté the onion in the margarine until tender. Blend in the flour, salt, and pepper. Gradually add the milk, stirring and cooking over medium heat until thickened and bubbly. Stir in the yogurt and green beans; heat thoroughly, about two minutes. Transfer to a 1-1/2-quart casserole. Sprinkle with the cheese, and broil in the oven until the cheese melts. Serve. Makes 8 Servings. Per Serving: 100 Cal; 4 g Total Fat (2 g Sat Fat); 10 g Carb; 8 mg Cholesterol; 129 mg Sodium; 7 g Protein; 2 g Fiber. Exchanges: 1/2 Very Lean Meat; 2 Veg; 1 Fat.
SWEET
POTATO CASSEROLE WITH Casserole: 3 cups cooked mashed sweet potatoes (yams) Praline Topping (directions follow below): 1 cup light brown sugar Preheat oven to 350°F. In a mixing bowl, blend together the potatoes, sugar, egg, egg white, evaporated skimmed milk, and vanilla. Place in a 2-quart casserole dish coated with nonstick cooking spray, and cover with Praline Topping (see recipe below). Bake for 45 minutes until topping is browned and casserole is thoroughly heated. Serve. Makes 8 to 10 Servings. Ed. Note: This special occasion recipe is a bit high on Carbs per serving, so be sure to make room for them in your daily meal plan! Note: Nutritional analysis based on 10 Servings. Per Serving: 333 Cal; 8 g Total Fat (1 g Sat Fat); 62 g Carb; 22 mg Cholesterol; 132 mg Sodium; 5 g Protein; 2 g Dietary Fiber. Exchanges: 2 Starch; 2 Other Carb; 1-1/2 Fat. PRALINE TOPPING In a medium bowl, mix together the brown sugar, flour, and cinnamon. Add the margarine, vanilla, and pecans, stirring until crumbly. Proceed with recipe as directed above.
LEMON
POPPY SEED CAKE 1 (18.25-ounce) package yellow cake mix Preheat oven to 350°F. Coat a 10-inch Bundt pan with nonstick cooking spray; set aside. In a large mixing bowl, combine the cake mix, oil, water, yogurt, egg, egg whites, almond extract, and 1/3 cup lemon juice. Beat until creamy. Stir in the poppy seeds. Pour the batter into the Bundt pan, and bake for 40 minutes, or until a wooden toothpick inserted in the center of the cake comes out clean. Cool in the pan on a wire rack for 10 minutes. Meanwhile, combine the confectioners' sugar and remaining 3 tablespoons lemon juice, stirring until smooth. Remove the cake from the pan onto a serving plate, and drizzle with the lemon glaze. Cool. Makes 16 to 20 (Slice) Servings. Note: Nutritional analyses based on 20 Servings.
